Root Down and Linger owner primes palate for 2015

Justin Cucci, the much-touted top toque who brought us Root Down, Linger and Root Down DIA, will open a new-concept eatery south of Linger in the uber popular LoHi neighborhood in the middle of next year, according to www.denver.eater.com.

“The new spot will be housed in a 2,700 square foot space located on the top, fifth floor, of a brand new development,” Eater Denver says. “The restaurant will showcase unobstructed eastern views of downtown Denver from a large open-air patio.

“The rest of the new 23,0000 square foot building located at 2930 Umatilla will be occupied by office tenants and another restaurant, Mizu. This contemporary Japanese eatery will be housed on a split-level 4,000-square-foot space on portions of the first and second stories of the building. Mizu will feature a full sushi bar and lounge, will feature indoor/outdoor space on both floors, several water features, and a distinct dining space and bar/lounge.”

Denver-based Gravitas Development Group is the company developing the new project. Gravitas is also credited with the shipping-container complex in RiNo that houses Work & Class restaurant, Huckleberry Roasters and Cart Driver.
