Troy Guard’s growing restaurant empire marches on

Sure chef Troy Guard just opened Los Chingones and Sugarmill, but that doesn’t mean he’s resting on his restaurant laurels.

Instead, he will open his largest concept yet in February. Guard & Grace (his daughter’s moniker) will be a 9,000-square-foot modern American steak house at 1801 California St.

The new space will offer private dining areas along with Denver’s largest patio with a fire pit, an expansive raw bar, wood burning oven and exhibition kitchen.

Meanwhile, Guard’s TAG Burger Bar at 1222 Madison St. is throwing its annual Taste of the NFL Fundraiser where a $25 donation to the Food Bank of the Rockies gets you beer, specialty cocktails and wings during the game on Sunday.

The January Burger of the Month at TAG Burger Bar is the New Year’s Resolution Burger: A veggie patty made from vegetable protein, edamame, quinoa and mushrooms on a whole wheat bun with a red beet gastrique, golden beet strings and brussel sprout leaves. Served with apple chips or French fries for $13.

Proceeds from this month’s burger go to Angel Eyes, an agency that provides free grief support services to anyone experiencing the sudden, unexpected loss of an infant or toddler.

Tasty tamale time at local La Sandia cantinas

La Sandia will host its third annual Tamale Festival through Jan. 31 at its Northfield Stapleton and Park Meadows locations to celebrate the culinary heritage and regional ingredients of Mexico. Chef Richard Sandoval has created a tamale menu to showcase this traditional winter dish.

Highlights of La Sandia’s Tamale Festival menu include:

Tamales:

  • Tradicionales – assorted tamales served family style (fried chicken tamale with tomatillo salsa/sweet corn tamale with queso fresco/mole pork tamale frijol con queso with entomatada salsa)  – $12.95.

Sample of entrees:

  • Chile Relleno de Tamale Durango – (stuffed chile rellenos with chicken tinga tamale, Mexican cheese, chorizo black beans, salsa, jalisco creme fresca and cotija) $15.95.
  • Tamale de Pescado a la Campeche – (fish tamale in banana leaves, epazote, tomato, masa, serrano, cilantro, grilled yellow squash, Mexican rice and refried beans) – $19.95.

New cocktails:

  • Fresh Pomegranate Margarita – (blanco tequila, pomegranate puree and citrus) – $10.95.
  • Ponche Mexicano – (traditional tequila spiked punch, cinnamon and tropical fruit) – $10.95.

Vail chef playing Solitaire in former Highland’s Garden Cafe space

Mark Ferguson, formerly of Spago in Vail and Las Vegas, and his wife, Andrea, will be opening Solitaire restaurant next spring in the building that housed Highland’s Garden Café, 3927 W. 32nd Ave., for nearly two decades.

Posted on the website www.solitairerestaurant.com: “Everyone will miss the beautiful gardens, fresh food, Sunday brunches, and holiday cheer of Pat Perry and The Highland’s Garden Café, but Ferguson has great plans for the much-loved space. The gardens are already being tended, the house is being painted, and the interior is being reconfigured with a brand-new bar.

“After 16 years in Las Vegas and five years in Vail, Ferguson has returned home to Denver and is excited to be opening a place of his very own. Soltaire’s world cuisine and comfy bar should be a very welcome addition to the West Highland’s community.”

Highland’s Garden Cafe closed in August.
